Produced biodynamically, this Ca’Fiui (named after the hill on which the estate is built) has an irresistible, exquisite floral (violet) and fruity (cherry) nose. It charms with its refined texture, sapidity and surprisingly easy digestibility (12.5° alcohol), unheard of in a wine from this appellation. A real favourite!

Viticulture

Production area: Val di Mezzane. Vines: Tamasotti, Bianchini, Rossetti and Cavallero, planted in 2004 and 2005. Altitude: 350 m. Exposure: south-east. Guyot cultivation. Slope: 8%. Certified organic and biodynamic cultivation. Ca'Fiui is the name of the hill on which the estate rests.

Oenology

Fermentation in 40 hl truncated wooden vats using indigenous yeasts. Maceration for 10 to 15 days. Aged in the same containers for 6 to 10 months.

Bresaola on a bed of rocket • Risotto with mushrooms • Taleggio.
