Vinification at Azienda Agricola Valentini is deeply rooted in tradition and minimal intervention. The estate is known for its attention to detail, organic farming practices and dedication to expressing the unique terroir of the Abruzzo region. The vineyards are planted with local grape varieties such as Trebbiano d'Abruzzo.
Oenology
Fermentation with indigenous yeasts without temperature control or filtration in ancient 50-70 hl oak barrels where it remains for 12 months.
