Thurgau, Pinot Noir n°3, Schlossgut Bachtobel - 2022

Its ruby colour is still studded with light purplish tints. The nose is expressive and elegant with its aromas of cherries, ripe prunes, spices and a fine touch of vanilla. The palate is built on finesse, with a verticality coated by a greedy fruit, very fine tannins and a perfectly integrated wood. Long finish on ripe fruit.

Technique

Viticulture

The Bachtobel estate, its cellars and its castle have been in the Johannes Meier family since 1784. The region has a long tradition of winegrowing, as evidenced by two wine presses dating from 1584 and 1729. Pinot noir is the main grape variety, accounting for 80% of the vines and producing 4 different wines. Here, there is a real concern for eco-responsible viticulture. For years, the estate has renounced the use of synthetic fertilisers and herbicides and has limited mechanical intervention. The soils are sandy-clay with a limestone content close to that of Burgundy.

Oenology

The vinification is preceded by a long cold maceration. During fermentation, the cap is punched down 6 times a day. Aged in barrels, 1/3 of which are new.

Suggestions for accompaniment

Roast chicken with morels - Quasi of veal with oyster mushrooms - Quail pie.
