Southern exposure, altitude 450 m. Terroir of limestone scree from the Chablais massif and glacier sediments (clay-limestone strata). Yield: 40 hl/ha. Biodynamic cultivation.

Oenology

Traditional vinification without chaptalisation, long fermentation of more than 4 months with indigenous yeasts and bacteria, coarse filtration on white earth. Very low S02 content.

Lake fish - Scallops with citrus butter.
