Viticulture

The estate's 10 hectares of vines are located on the best granite sites in Tournon, Mauves and Saint Jean de Muzols, in the original part of the appellation. The vineyards are cultivated organically, with very low yields thanks to severe pruning and debudding.

Oenology

The grapes are harvested as late as possible, at optimal ripeness, and the berries are picked by hand. The grapes are partially destemmed, then vinified with natural yeasts in large open vats with pumping over and punching down twice a day. The wines are aged for 14 to 16 months in 600-litre barrels, without any new oak.

Roasted monkfish in red wine, mashed potatoes with spring onions • Sliced lamb, split pea cream with cumin • Venison tenderloin.
