Neuchâtel Auvernier, Œil de Perdrix, Maison Carrée - 2022

Œil de Perdrix is the great historical and traditional rosé of Neuchâtel. Its amber colour and discreet tannins allow it to accompany a wide variety of dishes or to enhance an evening with friends. It can be drunk young with its aromas of red fruits and spices, or left to mature for a few months to develop rose and apricot stone. A superb gastronomic rosé.

Viticulture

The sedimentary and morainic soil of this site offers the vine a large volume of soil at depth. On certain plots such as La Pierre, Les Lerins, Les Tires or Le Montillier, the soil is reddish (iron) and the subsoil is stony. The mother rock, limestone, is not far away. Retaining water less easily, this soil lends itself wonderfully to Pinot Noir. Certified biodynamic cultivation.

Oenology

After crushing and a maceration of 2 to 3 days, during which some colour, aroma and tannin will diffuse from the skins into the juice, the grapes are pressed with the estate's old vertical presses. Fermentation and maturation take place in oak barrels. The wine is bottled in the spring.

Long before the existence of civil registers, parish registers revealed the presence of the name Perrochet on the site of Auvernier. The family line can thus be traced back to the 16th century. From that time until the first half of the 20th century, the majority of the population lived off the vine and fishing. Since 2008, Jean-Denis and his wife Christine have taken over the running of the estate, assisted since 2015 by their son Alexandre. If their predecessors had to be satisfied with a very empirical knowledge, they have been able to benefit from the scientific evolution and perfect their knowledge in this field. Thanks to this biological knowledge, from the vine stock to the glass of wine, it is now possible for them to happily preserve their old vertical presses and their ancient cellar. This indisputable advantage allows them to obtain wines that are always typical of their terroir, in the true and long-standing family tradition.The Neuchâtel vineyards are located on the southern flank of the Jura.
