Oenology
Fermentation temperature is controlled and selected yeasts are used. Vinification involves a maceration period of around 10 days, carried out at a temperature never higher than 26°C. After vinification, the wine is matured for 6 months in second-pass French oak barrels and concrete vats.
Suggestions for accompaniment
Spaghetti with bottarga - Potato gnocchi - Porceddu (suckling pig roasted over a wood fire and flavoured with myrtle leaves).
