Viticulture
The grapes come mainly from the vineyards of Luján de Cuyo and, to a lesser extent, from the Uco Valley. The region has a semi-desert climate with hot days and cool nights. The estate favours cool soils with good drainage and a fine sandy-silty texture, which allow for deep root development. In this climate, the team avoids soils with abundant superficial gravel, which increases the warming effect around the vines and could shorten the ripening season.
Oenology
Hand-picked grapes from different vineyards are vinified separately before the final blend. After careful double sorting, the grapes are gently pressed and fermented with indigenous yeasts to express each of the selected vineyards. Fermentation takes place in separate stainless steel tanks at 24-28°C for 10 days. Each tank is tasted three times a day to determine the requirements. The wine is then aged for at least 9 months in concrete tanks.
