The most important grape variety in the canton, but the most discreet at Satyre, where it accounts for just 3% of production! In these deep soils, it becomes fruitier and each year spreads its exotic scents of lemon, pineapple, quince and pear. A versatile Chasselas, it can be enjoyed as an aperitif or with cheese, and goes particularly well with caramelised Gruyère.

Technique

Viticulture

The plots are located in Begnins, with a few square metres in Luins. The soils are derived from limestone bedrock, more or less developed on a sandy-stony Rhodanian moraine. Located at the foot of the Jura, these plots benefit from the drying power of the Joran, which creates a favourable microclimate. The work in green is done by hand, from pre-pruning to harvesting.
