Viticulture
It is a grafted vine (18 year old vine) on light, sandy soil. Integrated production. Altitude 400 m, eastern exposure, 10% slope. Average yield: 45 hl/ha. First vintage produced : 1998.
Oenology
Whole bunch pressing, vinification in 500 litre barrels. Long alcoholic fermentation at the same time as malolactic fermentation. Little stirring of the lees.
Suggestions for accompaniment
Arctic char with beurre blanc - Pike in court-bouillon - Old salted Gruyère.
