Located in Cevins, the estate was created in 1999 on a schistose slope that was once cultivated but was abandoned over time. Once the forest was cleared, the vines were replanted and cultivated using biodynamic methods. Viticulture

Located in the commune of Cevins, the Domaine des Ardoisières was created in 1999 on a hillside that was cultivated a few decades ago but has since been completely reclaimed by the forest. Once the forest had been cleared, the vines were planted and cultivated from the outset using biodynamic methods. The hillside of Cevins is made up of a glacial lock facing south, with low dry stone walls.

Oenology

Vinification in oak barrels with indigenous yeasts (2 to 3 wines). Once the alcoholic fermentation is complete, regular stirring is carried out until spring. Malolactic fermentation is not systematically carried out (not done on the 2005 for example).

Suggestions for accompaniment

Sea bass with porcini mushrooms - Pan-fried prawns with curry - Scallops a la plancha and candied endives.
