Eau-de-vie, La Poire du Roulot 45° (50 cl)

Characteristics

In the heart of the village of Meursault, Jean-Marc Roulot and his sister Michèle have taken over the family estate. He is known to all as one of the greatest Burgundian winegrowers.

Oenology

This eau de vie is distilled from Williams pears harvested in Orches, in the Hautes Côtes de Beaune. After careful selection, the pears are fermented and then distilled in the family still. The eau de vie is preserved in glass bottles and stored for several years in attics. To perfect its ageing process, the spirit has to endure temperature variations over several seasons.
