Definition: Weighing

Back
In Champagne, weighing involves measuring the weight of the grapes arriving at the press in order to divide them into marc (a volume of grapes corresponding to 4,000 kg). The marc corresponds to the pressing volume of a traditional Champagne press. The cuvée, or the first 20.5 hectolitres that make up a "pure cuvée" champagne, will be extracted from this. The 5 hl at the end of pressing, known as the "taille", are excluded.
