Definition: Wachau

The "heuriger" or new wine, still cloudy, which is drunk in wine bars, had already fallen out of favour some twenty years ago, when demanding winegrowers began to demand the highest quality from their grape varieties. They had to painstakingly redevelop their ancestors' terraces on the steep slopes. These terraces had gradually disappeared under the pressure of cheap production, confined to the vineyards in the valley. Harvesting was easier and more abundant there. Today, it is more difficult, but what a result. They demonstrate that the younger generation knows how to successfully combine tradition and progress.
