Non Filtré, a Neuchâtel speciality, is a young wine for both amateurs and connoisseurs, characterised by its incredible freshness and silky roundness, an ambassador for spring.
This typical Neuchâtel wine is made from Chasselas grapes. Fermentation is complete by the beginning of January, when it is bottled without final filtration. As Non Filtré is the first wine of the year, for the impatient connoisseur it reflects the vintage that has just been harvested.
Its freshness, with a floral nose and exotic aromas ranging from citrus to pineapple, surprises the palate, which is more accustomed to other notes from Chasselas. The fine lees present in the wine give it a wonderful sensation of freshness.
Don't be fooled! The unfiltered wine made from this seemingly easy but ultimately very subtle grape variety is highly distinctive. Its eastern or western terroir and the work of its winemaker imbue it with their unique characteristics.
Unfiltered wine heralds the arrival of spring before the calendar does.
No matter! It is a finished and mature wine that enthusiasts and connoisseurs will enjoy as an aperitif, with smoked lake fish as a starter, or with fresh and semi-hard cheeses. And those who prefer originality will even pair it with more exotic dishes.
