In French-speaking Switzerland, it is used to define the stage of grape ripening that takes place in July/August. It announces a change in the colour of the grape skin.
Black grape varieties turn from green to blue, while white grape varieties become translucent. At this stage, the grapes are ripe and the vines are protected from damage by birds (see veraison).
