Definition: total acidity

Fixed acid and volatile acid content of wine. Total acidity contributes to the liveliness and freshness of a wine. It also ensures the stability of the wine's colour. A lack of acidity, on the other hand, makes the wine heavy and pasty. Total acidity is expressed in grams of sulphuric acid per litre (in France) and elsewhere in grams of tartaric acid per litre.
