A technique for controlling and regulating the temperature of fermentation vats, simply by running cold water over the vats. Modern systems are electronically controlled to the precise desired temperature and the cold is transferred to the vat by an immersed flag. This temperature control contributes significantly to improving the quality of wines. See temperature.
