In French-speaking Switzerland: semi-hard AOC cheese, originating from Bellelay Abbey (Bernese Jura). Tête-de-moine is much more than just a cheese. It is a true ambassador for its region. To enjoy it, grated into flower shapes, there is a special circular grater called La Girolle. It is only when grated that Tête-de-moine reveals its full flavour.
