Definition: tapenade

Back

Derived from the Latin word "tapeno", capers, tapenade is a Provençal condiment made from a purée of olives, anchovies and capers, with the addition of olive oil and salt, all in the form of a spread. The term is also used to describe the intense aroma of certain wines from warm countries. Tapenade goes well with certain white and rosé wines from the South of France.
