In all regions that produce sweet wines, only grapes that have reached over-ripeness on the vine are harvested. The harvesting technique involves the pickers making numerous passes through the vines. This harvesting is called successive sorting, with sorting being the name given to each pass. It is considered that the first selections produce the best wine. Due to their quantity, the time spent on these harvests greatly increases the price of the bottle.
