Back Savoie region. Production area located in part of the departments of Ain and Haute-Savoie, separated by the Rhône River at Seyssel, more precisely within the municipalities of Corbonod and Seyssel (for Ain) and Seyssel (for Haute-Savoie). Classified as a communal AOC in 1942. Area under production: just over 80 hectares, including around 15 hectares for sparkling wines. White grape varieties: Altesse (or Roussette), Chasselas and Molette. The latter two varieties are used to produce sparkling wines, with a minimum of 10% Altesse. Vinified exclusively as white wine, still or sparkling. The latter undergoes a second fermentation in the bottle. It can be kept: still wine, for 3 to 5 years; sparkling wines, as soon as they are produced. Ideal serving temperature: between 8 and 10°C. Pairing suggestions: sparkling wines are ideal as an aperitif or with dessert, such as a mirabelle plum cake; still wines pair well with crayfish, pork tenderloin glazed with Reblochon cheese and turnip confit, or white pudding.
