Definition: Serac, Séré

Back
A fresh, compact, low-fat white cheese. An old regional word, séret, from the old dialect serai, serat, from the Latin serum. Sérac is made from whey, a by-product of cheese production. To make séré, the whey must be heated in a 420-litre cauldron.
