Charente distillation consists of two distillations, the second of which, called bonne chauffe, produces the heart, or cognac. When the alcohol reaches 58 degrees, the cut consists of separating the bad elements from the heart. Everything produced after that is called seconds. Heads and seconds are not used in the production of brandy.
