In French-speaking Switzerland, this term refers to shavings of mature hard cheese served with white wine as an aperitif. Example: When young, Sbrinz is usually shaved and served in ribbons. In German-speaking Switzerland, it is known as "Hobel" and therefore "Hobel Käse". Berner Hobel Käse was awarded AOC status in March 2004.
