Definition: Rafle

The woody part of the bunch that holds the berries. An uncrushed harvest can add extra astringency. For this reason, black grapes are crushed before vatting. On the other hand, white grapes, which are pressed immediately, are not crushed. Pressing is made easier by draining the stalks.
