Centre-Val de Loire region. Production area located south-east of Vierzon, on the left bank of the Cher, more precisely within the municipalities of Brinay and Quincy in the Cher department. Classified as an AOC in 1936. Area under production: just over 170 hectares. The total area covered is 1,000 hectares. White grape variety: Sauvignon Blanc. Vinified as a dry white wine only. It can be kept: ages very well in bottles, from 3 to 10 years. Ideal serving temperature: between 10 and 12°C. Pair with: shellfish, oysters and mussels, grilled fish, fish terrine or white pudding.
