Back Haut-Pays region. Production area located within 15 municipalities in the Lot department and 18 in Lot-et-Garonne, mostly between Cahors and Montauban. The northernmost commune is Labastide-Marnhac (located just under 10 kilometres south of Cahors) and the southernmost is Vaïssac (located about 20 kilometres east of Montauban on the left bank of the Aveyron). Classified as VDQS in 1999. Area under production: nearly 250 hectares. Black grape varieties: Cabernet Franc (minimum 40% and maximum 60%); Côt, Gamay, Merlot and Tannat, each of these four varieties must not represent more than 20% of the vineyard. Vinified as: rosé and red. It can be kept: rosé should be drunk young; red up to 10 years. Ideal serving temperature: between 8 and 10°C for rosé; between 15 and 16°C for red. Pairings: rosé with fine charcuterie, with or without raw vegetables, fish or white meat; red with Castelnaudary cassoulet.
