Côte-de-Beaune region. Production area located about twelve kilometres south-west of Beaune, more precisely within plots in the commune of Puligny-Montrachet in the Côte-d'Or department. Classified as a communal AOC in 1970 with 27 premiers crus. The area covers 214 hectares, including 100 hectares classified as premier cru. Area in production: nearly 208 hectares. White grape varieties: Chardonnay and Pinot; grey: Pinot Beurot; black: Pinot and Pinot Liébault. To produce red wines, the harvest of white and grey grape varieties such as Chardonnay and Pinots is still authorised, provided that they do not exceed 15%. Vinified: mostly white and a very small quantity of red. It can be stored: from 3 to 8 years for white, hardly more than 10 to 12 years for the best vintages; from 5 to 10 years for red, up to 15 years, depending on the vintage. Ideal serving temperature: between 12 and 14°C for white, between 14 and 15°C for red. Pair with: white wine with poultry in cream sauce, pike dumplings, lobster, Bresse chicken braised with tarragon, or grilled or baked fish; red wine with partridge with raisins.
