Back Centre region of the Loire Valley. Production area located in the Nièvre department, on the right bank of the Loire and opposite the Sancerre vineyards. Classified as an AOC in 1937. Area under production: nearly 1,000 hectares. White grape variety: Sauvignon, also known as Blanc Fumé. Vinified exclusively as white wine. It can be kept: ages fairly well in bottles, from 2 to 5 years, although it excels when young with its fruitiness. Ideal serving temperature: between 9 and 10°C. Pair with: oysters and mussels, grilled or gratinated prawns, langoustines or crabs, fish in sauce, mussel skewers with bacon or artichoke gratin with andouillette sausage.
