Back Côte-de-Beaune region in Burgundy. Production area located in the south-west near Beaune, more precisely within plots in the commune of Pommard in the Côte-d'Or department. Classified as a communal AOC with 28 premiers crus in 1936. Area under production: just over 313 hectares, including 125 hectares of premier crus. The total area covered is 337 hectares. Grape varieties: grey: Pinot Beurot; black: Pinot Noir and Pinot Liébault. The incorporation of a certain number of white and grey grape varieties such as Chardonnay and Pinots into the vineyards intended for producing red wines is still authorised, provided that they do not exceed 15%. Vinified in: red exclusively. It can be kept: astringent in its youth, it needs to mature for a few years, from 5 to 15 years, or even longer, depending on the vintage or the premier cru. Pommard is one of the Burgundy wines with the best ageing potential. Ideal serving temperature: between 14 and 15°C. Enjoy with: hare stew, beef Bourguignon, rib of beef or wild boar medallions.
