Back Côte-de-Beaune region. Production area located 7 kilometres north of Beaune, more precisely within plots in the commune of Pernand-Vergelesses in the Côte d'Or department. Classified as a communal AOC with 10 premier crus in 1970. Area under production: nearly 128 hectares. The total area covers 194 hectares, of which 57 hectares are classified as premier cru. White grape varieties: Chardonnay and Pinot; grey: Pinot Beurot; black: Pinot Noir and Pinot Liébault. The incorporation of white and grey grape varieties such as Chardonnay and Pinot into the harvest intended for producing red wines is authorised, provided that they do not exceed 15%. Vinified as: white and red. It can be stored: from 3 to 8 years for white; from 5 to 10 years for red, or even 15 years, depending on the vintage. Ideal serving temperature: between 12 and 14°C for white; between 14 and 15°C for red. Pair with: white, a hot starter such as a pie or quiche, grilled or baked fish; red, partridge with raisins, pigeon with peas or grilled or roasted red meat.
