Back Like Louis XIV, born in 1639 and died in 1715, this Benedictine monk became the cellarer of Saint-Pierre Abbey in Hautvillers. Having written very little about his activities, many legends arose, which were complacently repeated in contemporary advertisements. Dom Pérignon did not invent the principles of champagne production, as is often claimed. On the other hand, his astonishing oenological skills enabled him to develop techniques that improved the quality potential of sparkling champagne. He also proved to be a shrewd merchant, particularly with British customers. This is more than enough to earn him credit.
