It is the name of a traditional dish, the famous "saddle of veal Orloff". Braised, sliced, stuffed with mushroom and onion purée and sometimes a few slices of truffle, the saddle of veal is then reassembled, topped with Maintenon sauce, sprinkled with Parmesan cheese and glazed in the oven.It seems that this dish was invented by Urbain Dubois and dedicated to Prince Orloff (minister and ambassador to Tsar Nicholas I), in whose service he worked for more than twenty years. The Orloff garnish is usually composed of braised celery, braised lettuce and château potatoes.
