A sweet or savoury dish made with whole beaten eggs cooked in a frying pan. Its origin is uncertain, but the Romans referred to a dish made with eggs beaten with honey and cooked in a clay dish as "ova mellita". In the Middle Ages, it was known as "arboulastre d'œufs".
