Definition: oeil-de-perdrix

L'œil-de-perdrix from the canton of Neuchâtel is a rosé wine with an excellent reputation. It is not a registered name, so it is also used in other regions. However, in the canton of Neuchâtel, the name Perdrix Blanche has just been registered. It is reserved for white wines made from red grapes (blanc de noirs). In Valais, this same production is known as Dôle Blanche.
