Another type of mycoderma, known as "fleur", forms a protective film on wines such as sherry and vin jaune when the alcohol concentration is between 14.5% and 16%. Below this level, the transformation produces vinegar.

In the long vinification process for Tokaji (Tokay) wine from Hungary, there is also a maturation phase in barrels, without topping up, during which a different film from the previous one (sherry, vin jaune) forms on the surface of the wine. This is caused by the proliferation of specific fungi (Racodium cellare) that cover the very cool cellars where this speciality is stored.
