Another type of blackish mould, mixed with cobwebs, is often found in the wine cellars of large estates, where century-old bottles are completely covered in these strange filaments. The atmosphere in such cellars is purified and regulated in terms of humidity by this mould, which is proof of optimal storage conditions. Only the labels will suffer, so the contents of each bottle rack must be recorded in some way (identification collars, slates, data sheets, etc.).
Mould in the casks is a sign of poor maintenance and can contaminate the wine. Empty casks must be scalded, sealed and bunged very regularly.
