The incorporation of white grape varieties such as Aligoté, Chardonnay and Melon into the vineyards is permitted, provided that they do not exceed 15%. Vinified in red only. It can be kept for 2 to 5 years, or even longer, depending on the vintage. Ideal serving temperature: between 13 and 14°C. Enjoy with: country pâté, mutton stew, wild duck with onions, Normandy-style pheasant or leg of lamb.
