Back Côte-de-Nuits region in Burgundy. Production area: located to the north near Nuits-Saint-Georges, more precisely within plots in the commune of Morey-Saint-Denis, in the Côte-d'Or department. Classified as a communal AOC with 20 premiers crus in 1936. Area under production: just over 90 hectares, including 3.5 hectares for whites. The total area is 108 hectares, including 44 hectares of premier cru. White grape varieties: Chardonnay and Pinot Gris; Pinot Beurot; black grape varieties: Pinot Noir and Pinot Liébault. The incorporation of a certain number of white and grey grape varieties such as Chardonnay and Pinot into the vineyards intended for producing red wines is still authorised, provided that they do not exceed 15%. A very small quantity is vinified as white wine, with the vast majority being vinified as red wine. It can be kept for a very long time, from 5 to 15 years. Ideal serving temperature: between 8 and 10°C for white; between 16 and 17°C for red. Pair with: red wine, roasted or grilled red meat, guinea fowl with cabbage, hare stew or rabbit with mustard.
