Back Côte-Chalonnaise region in Burgundy. Production area located about fifteen kilometres south-west of Chalon-sur-Saône, more precisely within the municipalities of Buxy, Jully-Lès-Buxy, Montagny-Lès-Buxy and Saint-Vallerin, in the Saône-et-Loire department. Classified as a communal AOC in 1936. Area under production: just over 350 hectares, including just over 225 hectares of premier cru. White grape variety: Chardonnay. Vinified in white only. The appellation covers a total of 437 hectares, including 276 hectares of premier cru. It can be kept for 2 to 6 years. Ideal serving temperature: between 8 and 10°C. Enjoy with: salmon, fillets of lemon sole with sorrel, rabbit stew or chilled fennel soup.
