This appellation in the centre of the Loire region produces light, lively red wines made from Pinot Noir grapes. They should be drunk young, between 2 and 5 years old.
The whites have the character of Sauvignon Blanc, but the aroma is often unexpected. They should be drunk within 2 years. The production area is located north-east of Bourges, largely on the left side of the D955 road towards Sancerre, more precisely within the communes of Aubinges, Humbligny, Menetou-Salon, Morogues, Parassy, Pigny, Quantilly, Saint-Céols, Soulangis and Gignoux-sous-les-Aix in the Cher department.
Classified as an AOC in 1959, with the possibility of including the name of the commune of origin. Area under production: just over 400 hectares, 60% of which are planted with white grapes. The total area covered is 1,090 hectares. White grape varieties: Sauvignon blanc; black: Pinot noir. Mostly vinified as dry white, rosé and red wines. It can be kept for 1 to 3 years for white and rosé wines and 5 to 6 years for red wines. Ideal serving temperature: between 8 and 10°C for white and rosé wines and between 14 and 15°C for red wines. Pair with: white wines with asparagus tart or fish puff pastry; red wines with rabbit roulades or white pudding.
