A vineyard in the Haut-Pays region of France, awarded AOC status in 1990. The production area is located within 11 communes in the department of Aveyron, near Marcillac-Vallon, itself located about 20 kilometres north-west of Rodez. Red, rocky and rustic, its wines soften with age and release the typical aromas of the dominant grape variety, Fer Servadou. The rosés are dry, full-bodied, vibrant and charming. Area under production: just over 150 hectares. Black grape varieties: Cabernet Franc, Cabernet Sauvignon, Fer Servadou (minimum 90%) and Merlot. Vinified as: mostly rosé and red. Can be kept: rosé should be drunk young; red can be kept for 2 to 5 years. Ideal serving temperature: between 8 and 10°C for rosé; between 14 and 16°C for red. Pair with: rosé with cold meats and grilled meats; red with red meat or game.
