A particular style of sherry produced exclusively in Sanlúcar de Barrameda, at the mouth of the Guadalquivir River in Spain. Pale and sweet fino. With age, it becomes Pasada, more full-bodied, then a Manzanilla Amontallado, rich and complex, often superb. Like fino, it is a pale, light, dry sherry, which is strongly influenced by the yeasts in the veil (flor), which develop significantly during its ageing. This intensely bouqueted sherry has a salty, iodine note, imparted by the marine atmosphere, as well as oxidative nuances of walnut, wax polish, fenugreek, cumin, etc.
