Back Rhône Valley region. Production area located mainly south-west of Lyon, on the right bank of the Rhône, but also to the west and north, more precisely within 49 municipalities in the Rhône department. Classified as an AOC in 1984. White grape varieties: Aligoté and Chardonnay; black: Gamay. Area under production: just over 350 ha. Vinified as: white (in very small quantities), rosé and red. Can be kept: a few years for white; rosés and reds should be drunk young. Ideal serving temperature: between 8 and 10°C for white; between 10 and 12°C for rosé; between 13 and 14° for red. Pair with: white, river or sea fish; rosé, Lyonnais charcuterie, preferably accompanied by raw vegetables; red, grilled or sauced red meat, sausage in pastry, pot-au-feu, grilled andouillettes or roast poultry.
