Languedoc region. Production area located on the hillsides bordering the Aude valley, south-west of Carcassonne, within 41 municipalities in the Aude department, with Campagne-sur-Aude being the southernmost and Rouffiac-d'Aude the northernmost. The vineyards are located at an altitude of between 100 and 200 metres. Classified as an AOC in 198. White grape varieties: 90% Mauzac (100% in wines produced using the ancestral method), Chardonnay and Chenin. Area under production: less than 1,000 hectares, including the ancestral method. Vinified as: sparkling white, dry or semi-dry, second fermentation in bottles (spontaneous, within the production area for the ancestral method). Can be drunk: as soon as it is released. Ideal serving temperature: between 6 and 8°C. Enjoy with: as an aperitif, or to accompany salmon mousse, apple and walnut cannelloni or dessert.
