Côte de Beaune region. Production area located 7 kilometres north-east of Beaune, more precisely within plots in the commune of Ladoix-Serrigny, in the Côte d'Or department. It is the northernmost of the Côte de Beaune appellations. Classified as a communal AOC with 12 premiers crus. Authorised grape varieties: white: Chardonnay and Pinot Blanc; grey: Pinot Beurot; black: Pinot Noir and Pinot Liébault. Area under production: 100 hectares, of which just under 13% is white. The incorporation of white and grey grape varieties such as Chardonnay and Pinots into the harvest intended for producing red wines is authorised, provided that they do not exceed 15%. The appellation covers a total of 142 hectares, of which 24 hectares are classified as Premier Cru. Vinified: a very small quantity as white wine and most as red wine. Can be kept: 3 to 5 years for white wine; 5 to 8 years for red wine, or even longer, depending on the vintage and the Premier Cru. Ideal serving temperature: between 12 and 14°C for white wine; between 14 and 15°C for red wine. Pair with: white wine with almond trout, grilled red mullet, fish terrine or poached or grilled freshwater fish; red wine with hare saddle with juniper, pâté en croûte, coq au vin, grilled or roasted red meat or meat in a light sauce.
