An enzyme belonging to the polyphenol oxidase family, capable of oxidising phenolic compounds, particularly tannins. This enzyme is secreted by the grey mould agent (Botrytis cinerea) to enable it to penetrate the berry by breaking through the passive defence barrier formed by the skin and its phenolic compounds.
