Back French Jura region. Production area located within the municipalities of Étoile, Plainoiseau, Quintigny and Saint-Didier in the Jura department. Classified as a communal AOC in 1937. Area under production: nearly 80 hectares. White grape varieties: Chardonnay, Poulsard and Savagnin. Produced as white wine, yellow wine (savagnin grape variety only), sparkling wine by secondary fermentation in bottles and straw wine. The latter must display the year of harvest on its label. It can be stored for: 3 to 10 years for white wine; 2 to 3 years for sparkling wine; 20 to 30 years for yellow wine and straw wine. Ideal serving temperature: between 10 and 12°C for white and straw wine; between 6 and 7°C for sparkling wine; at room temperature for vin jaune. Pairings: white wine with almond trout, white meat with cream sauce or dessert, with red fruit and orange tartlets; straw wine or sparkling wine with dessert; vin jaune with duck à l'orange.
