Back Pyrenees region. Production area located within 15 municipalities in the Pyrénées-Atlantiques department, between Saint-Jean-Pied-de-Port and Saint-Etienne-de-Baigorry, about 50 kilometres south-east of Biarritz, on the border with Spain. Classified as an AOC in 1970. Area under production: just over 190 hectares. White grape varieties: Courbu, Gros Manseng and Petit Manseng; red varieties: Cabernet Franc, Cabernet Sauvignon and Tannat. Produced as white, rosé and red wines. Can be kept for: 2 to 3 years for white and rosé wines, 4 to 5 years for red wines. Ideal serving temperature: between 8 and 10°C for whites and rosés, between 15 and 16°C for reds. Pair whites with shellfish or crustaceans; rosés with cold meats, grilled meats or grilled fish; reds with red meat or game.
